
Paolo Gastaldo is a hospitality and food & beverage professional born in Genoa, whose career has been shaped in some of the most prestigious hospitality destinations, including The Dorchester in Mayfair, London, and Belmond Hotel Cipriani in Venice. Over the years, he has also spent several winter seasons working in Cortina d’Ampezzo, further refining his expertise in luxury hospitality. Paolo first connected with Portofino Dry Gin through Chris, the brand’s CMO and Co-Founder. The two met in the famous Piazzetta of Portofino while Chris was enjoying Paolo’s iconic Negroni, served in the brand’s miniature Portofino bottle at Belmond Splendido Mare. From that moment, it became clear that their paths and shared passion could lead to the creation of something special. From the very beginning, Paolo was drawn not only to the quality of the product but also to the story behind it and the passion for sharing the beauty and identity of Portofino. Being originally from Liguria, the brand immediately resonated with him, making the collaboration feel both natural and meaningful.
